Fermentation takes place in traditional vats, the lagares, at a controlled 2830C with regular mixing. When the must reaches the right level of sweetness (baum), grape spirit is added to stop fermentation and create the fortified wine. This tawny is a blend of wines from different harvests to achieve the classic balance of flavour
